Cranberry Cookies

Kaurakeksit ovat yleensä jo itsessään mukavaa mussutettavaa, ja helppoja tehdä. Tykkään itse tuunata reseptiä kuivatuin karpaloin, mantelirouheella ja joskus valkosuklaapaloilla. Ihan kahdella ensimmäiselläkin saa makeannälän taitettua varsin hyvin!


Ideana on laittaa sekaan, mitä kaapista löytyy.

Karpalokaurakeksit, noin 30 kappaletta
125 g sulatettua voita tai margariinia
1½ dl ruokokidesokeria
(2 rkl muscovado-sokeria)
1 dl karpaloita
1 dl mantelirouhetta
3 ½ dl kaurahiutaleita
1 dl erikoisvehnäjauhoja
¾ dl  kermaa
1 tl soodaa

Itse aloitan yleensä paloittelemalla karpaloita kevyesti. Sen jälkeen sulatan rasvan ja sekoitan siihen kuivat ainesosat reseptin mukaisessa järjestyksessä. Sooda ja kerma sekoitetaan ensin keskenään, ennen lisäämistä taikinaan.
Muotoilen kekseistä palloja, jotta ne eivät leviäisi vallan mahdottomasti paiston aikana. Pallerot paistetaan 200 asteessa noin kymmenen minuuttia. Kannattaa antaa keksien jäähtyä kunnolla uunista ottamisen jälkeen, koska jähmettymisen jälkeen ne pysyvät paremmin kasassa.

Tällä reseptillä keksit voi jättää halutessaan keskeltä hieman pehmeiksi.

I tend to keep dried cranberries around as a snack, but they are also sweet addition to oatmeal cookies. I happened find this out after Christmas when I added berries and some left-over chipped almonds into to the dough. These cookies certainly help when you crave for sweets! :) And if not, add some chopped chocolate in.

Cranberry Cookies, 30 pcs
125 gr. melted butter
150 ml. table sugar (brown)
( 2 tablespoons of muscovado sugar)
100 ml. dried cranberries
100 ml. chopped almonds
350 ml. oatmeal
100 ml. wheat flour
75 ml. cream
1 teaspoon baking soda

Preheat the oven to 200 °C.
I usually start by slicing the cranberries into slightly smaller bits. Then I melt the butter and continue by adding the dry ingredients in the order of the list above. The cream and the baking soda are mixed with each other, then added in the dough.

I roll dough, about a size of tablespoon, into balls and place on baking paper. Bake the cookies for around 10 minutes. This leaves them slightly doughy which tastes great! One should leave cookies to harden for several minutes.
